Additional comments and observations
It was an incredible class - food was fabulous and the recipes are all doable. My one suggestion for in the future when you are doing several of the "same" - use 4 separate colors for the recipes. You can tell us you are on the pink page or the yellow page (or we can even look at the color of the page in front of you) and in the case of last night, you could have used the colors for the dressings to make it easy to tell which one went with which recipe. I said it was average in complexity - I'm guessing the prep time on cleaning and chopping the kale is pretty high. Overall - outstanding class and so glad I was there.

Additional comments and observations
Overall I loved this class and am thrilled to have the opportunity to learn more about kale and quinoa! I liked the way the salad dressings were made at one time. The confusing part was the going back and forth between the prep of each salad. I wonder if color coding the recipes on different colored paper and color coding the trays the ingredients go on would help with some of that confusion.

This class provided me exactly what I was looking for: an introduction to kale and quinoa. Saying the food was good means the food was very tasty but somewhat similar.
