Think I might add a little more spice to some of the recipes. I plan to have my family over for Fat Tuesday dinner using Chef Randy's recipes---just dont know which--sure liked the richness of the roux made with butter. The Shrimp polenta was very good--different too.

REALLY enjoyed the chef --- hope he is able to present again. Try to bring some friends with me ---- my taste buds are still so happy ---- plan to make at least one of the recipes this weekend
