The menu was a good introduction to Korean dishes, however there was little opportunity to see/learn how the other dishes (that I wasn't responsible for) were prepared. Consider allowing each student to prepare all menu items (mis en place for individual portions) as opposed to 1-2 each. I realize this takes more planning and preparation.
Some classes I'd like to see:
-Fundamental techniques series (braising, deep frying, roasting, poaching, grilling, etc.)
-Dumplings (not just Asian, but from various regions
